Finely grate the zucchini, then place in a colander. Tip: Lightly salt the grates zucchini and let it sit for 10 minutes to draw the excess water. Then squeeze it between your hands or in a clean cloth to remove the excess water. This prevents the fritters from becoming too soggy.
Finely slice the onion, then sauté it over low heat in a pan with a drizzle of olive oil unit soften. While the onion is cooking, dice the Saint Agur Blue Cheese.
In a large bowl, combine the drained zucchini, cooked onion, oats, and diced Saint Agur Blue Cheese
- Form this mix into patties by hand or using a cookie cutter by pressing them down slightly so they hold their shape well. If the mixture seems too wet, add an extra tbps of oats or flour to help bind the mixture.
- In a pan, add some oil and cook the patties for 3-4 minutes on both side, until golden brown.
Serve hot, warm, or even cold, accompanied by a green salad or a lemon and garlic yogurt for a refreshing touch.
