Wash the apple, remove its core and slice its flesh into thin strips.
- Brown the bacon in a hot pan, without adding any fat.
Spread the onion confit over half of the brioche slices, and the apple slices over the half.
Add a slice of bacon and two slices of Saint Agur Blue Cheese, then close the croque-monsieurs.
Cook the croques according to the method of your choice; in a sandwich maker, in the oven, or in a pan, with melted butter to have the golden crust.
